Gregory Devaney is the founder and visionary behind Le Marché, a gourmet market and café concept rooted in hospitality, culture, and "casual elegance." Before entering the culinary world, Gregory served six years in the U.S. Army as a Tactical Controller, completing deployments to Iraq and Afghanistan. During his service, Greg traveled to 45 countries, developing a deep appreciation for how food, wine, and genuine hospitality bring people together.

Following a mission-related injury and the loss of close friends, Greg returned home in 2014 determined to pursue a passion-driven path. He attended culinary school while working as an Air Traffic Controller, later training in fine dining in the Hamptons. In 2018, he met his wife, Jessie; together, they continued exploring global culinary traditions. After relocating to Amelia Island, Florida, they launched Le Marché in historic Fernandina Beach, offering curated charcuterie, caviar, and dry-aged steaks. Today, Gregory and Jessie are expanding Le Marché into a franchise opportunity, allowing others to bring the brand’s unique blend of refinement and heartfelt hospitality to communities across the country.
